Ce petit g\u00e2teau sec en forme de \u00ab\u00a0S\u00a0\u00bb invers\u00e9 est n\u00e9 dans la r\u00e9gion de Balagne, au nord de la Corse.<\/p>\n\n\n\n<p>Son nom vient de \u00ab\u00a0salvia\u00a0\u00bb, la sauge en latin. Une plante aromatique autrefois pr\u00e9sente dans la version traditionnelle. Aujourd\u2019hui, certains pr\u00e9f\u00e8rent la remplacer par du citron pour un parfum plus doux et acidul\u00e9. C\u2019est justement cette variante que je te propose.<\/p>\n\n\n\n<p>Son go\u00fbt ?&nbsp;<strong>L\u00e9ger, citronn\u00e9, subtilement sucr\u00e9<\/strong>. Sa texture friable fond dans la bouche. Autrefois r\u00e9serv\u00e9e aux f\u00eates religieuses, la salviata est devenue une madeleine de Proust insulaire.<\/p>\n\n\n\n<p>Elle se d\u00e9guste avec un caf\u00e9, un verre de muscat ou, tout simplement, avec les doigts \u00e0 l\u2019<a href=\"https:\/\/www.legourmeur.fr\/news\/ce-cheesecake-au-gout-denfance-et-de-speculoos-est-pret-en-10-minutes-la-recette-magique-de-philippe-etchebest\/\">heure du go\u00fbter<\/a>.
