Lavez les kumquats, \u00f4tez p\u00e9doncules et p\u00e9pins. Blanchissez-les 2 minutes, puis confisez-les 1 h avec le sucre, le gingembre et 12 cl d\u2019eau. Faites-les pocher 10 min dans le lait avec la muscade, l\u2019ail press\u00e9 et du sel. \u00c9gouttez, disposez dans un plat \u00e0 gratin, arrosez de cr\u00e8me, salez, poivrez et parsemez de beurre. Enfournez 40 min.<\/li>\n\n\n\n<li><strong>Cuire les magrets<\/strong>\u00a0: quadrillez la graisse. Faites-les cuire c\u00f4t\u00e9 peau 4 min en retirant le gras fondu (gardez-en 1 c. \u00e0 soupe pour la sauce). Retournez et cuisez 2 min.
